Tom Yum Poached Salmon with Pineapple Salad
Prep + cook time: 30 MINUTES
Serves: 4
Ingredients
500g (1lb) cherry tomatoes, halved
4cm (11/2in) piece ginger, peeled, chopped finely
4 cloves garlic
2 tablespoons finely chopped coriander (cilantro) stems
1 stalk fresh lemongrass, white part only, chopped finely
1 long red chilli, seeded, chopped coarsely
200g (6½oz) yellow-flesh pineapple, chopped coarsely
1 tablespoon vegetable oil
1 cup (250ml) fish stock
2 kaffir lime leaves
2 tablespoons fish sauce
4 x 150g (41/2oz) skinless, boneless salmon fillets
1 cup coriander (cilantro) sprigs
1 cup Thai basil leaves or mint
¼ cup (60ml) lime juice
500g (1lb) packet microwave
brown rice
Method
Process half the tomatoes, half the ginger, the garlic, coriander stems, lemongrass, chilli and half the pineapple until it forms a smooth paste.
Heat oil in a large, deep non-stick frying pan; cook the paste, stirring occasionally, for 8 minutes. Add stock, lime leaves and fish sauce; bring to a simmer. Cook for 5 minutes. Season well.
Add salmon to pan. Reduce heat to low; cook salmon for 4 minutes. Turn salmon; cook for a further 3 minutes or until just cooked through.
Thinly slice the remaining pineapple. Place sliced pineapple in a medium bowl with remaining tomatoes, remaining ginger, the coriander sprigs, basil and lime juice; toss gently to combine. Season.
Heat rice following packet directions.
Serve salmon and sauce with pineapple salad and brown rice.
