RECIPE: Air fryer chilli onion rings from the School Lunchbox Dad

Serves: 4

You can make these onion rings without the chilli, but I like to add extra so that no one else dares eat them and there’s more for me. It’s a typical egg wash and breadcrumb situation here, but it’s the one per cent spice that makes all the difference.

Ingredients

50 g (½ cup) dried breadcrumbs
3 tablespoons grated parmesan
1 tablespoon smoked paprika
1 teaspoon cayenne pepper
1 teaspoon chilli powder
1 teaspoon garlic powder
1 teaspoon celery salt
1 teaspoon freshly ground
black pepper
2 eggs, lightly beaten
2 large onions, cut into 1 cm thick
rounds, rings separated
olive oil spray

Method

Place the breadcrumbs, parmesan, smoked paprika, cayenne, chilli powder, garlic powder, celery salt and pepper in a shallow bowl and mix well with a fork.

Place the beaten egg in a separate shallow bowl.

Line the base of your air fryer with baking paper.

Dip the onion rings in the beaten egg, then straight into the breadcrumb mixture, then straight into the air fryer. When the air fryer is choc-a-block full, spray the onion rings with olive oil to coat well.

Turn the air fryer to 200°C and cook for 6 minutes or until golden brown and crispy. These onion rings make the perfect side dish or the ultimate dude food. Enjoy!

Cool Tips

If you want to reduce the level of spice, leave out the cayenne pepper and chilli powder, but leave in the smoked paprika as this gives the onion rings the smokiness they need to make them authentic and delicious.

On a side note, I’ve only recently gotten into celery salt. If you don’t like it, feel free to use regular salt flakes instead.
